I went back to work just eight weeks after giving birth. Short on sleep and run down, I was in and out of the hospital every month, and in the end I had a total hysterectomy. I used to bake a lot of wheat bread, but someone told me gluten wasn't good for me, so I learned to make rice-flour bread. When I loosely started going gluten-free, my constipation cleared up and I became interested in gut health. The more I learned, the more I heard that you actually have to eat to lose weight. My belief that dieting means not eating was turned upside down, and I kept discovering things I had never known — I wished I had learned all this sooner. Our bodies are made of what we eat. You can eat anything you like, but I've found that having the knowledge to choose for yourself makes a real difference, and I want to share that with you.
